Ingredients

  • 2 cooked Andouille Cajun style sausages (6 ounces)
  • 8 oz boneless, skinless breast
  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 2 teaspoons chopped garlic (2 medium cloves)
  • 8 oz red or yellow potatoes, chopped

    1/2 teaspoon kosher salt
  • pinch fresh ground black pepper
  • 15 oz canned kidney or black beans, drained
  • 28 oz diced canned tomatoes (I prefer Pomi brand in the carton)
  • 4 cups low sodium chicken broth
  • 1 cup grated cheddar cheese (4 ounces)
  • 2 tablespoons chopped fresh cilantro
  • Crispy Fried Tortillas (see note)
