Rubbed Chicken Skewers with Chipotle Dipping Sauce
Serves: 6 skewers
  • Rub:
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons brown sugar
  • 1 teaspoon oregano
  • ½ teaspoon kosher salt
  • Fresh ground black pepper
  • Chipotle Dipping Sauce:
  • 1 cup plain Greek yogurt
  • 3 tablespoons canned chipotle peppers in adobe sauce
  • 1 tablespoon lemon juice
  • 1-1/2 teaspoons honey
  • Kosher salt
  • Fresh ground pepper
  • 2 pounds boneless, skinless chicken breast
  • 6 wooden skewers
  1. For the rub, stir together chili powder, paprika, cumin, brown sugar, oregano, salt and pepper.
  2. For the chipotle sauce, puree chipotle peppers and sauce until smooth. Stir in yogurt, pureed, lemon juice and honey; season with salt and pepper. Refrigerate until using.
  3. Cut chicken into approximately one-inch chunks; toss with the rub mixture turning chicken and pressing mixture on all sides of the chicken; cover and refrigerate 30 minutes or up to several hours.
  4. Submerge skewers in water and allow soaking 30 minutes (this helps prevent them from burning on the grill).
  5. Heat grill to medium high heat.
  6. Skewer chicken putting 4-5 chunks on each skewer. Grill skewers until cooked through, about 10 minutes, turning once or twice during cooking.
  7. Serve with Chipotle Dipping Sauce.
