Maui-Style Ribs
Serves: 4
  • 1-1/4 cups soy sauce or low sodium soy sauce
  • ½ to ⅔ cup sugar
  • ½ cup water
  • ¼ cup chopped green onions
  • 3 tablespoons rice vinegar
  • 1-1/2 tablespoons sesame oil
  • 1-1/2 tablespoons chopped garlic
  • 1-1/2 tablespoons chopped peeled fresh ginger
  • ½ teaspoon dried red pepper flakes
  • ½ teaspoon ground black pepper
  • 12-14 thinly cut beef short ribs (about 3 pounds) also called Korean or Kalbi ribs
  1. Whisk together all ingredients, except the ribs; put in a dish for marinating or in a re-sealable plastic bag bag. Add ribs, turn to coat evenly; cover and refrigerate 24 hours, turning two to three times during marinating (ribs can be marinated 48 hours if desired).
  2. Preheat the grill to medium heat.
  3. Remove ribs from marinade and discard marinade. Grill ribs, turning once until cooked to desired doneness, about 4-5 minutes per side.
